High protein red-orange lentil, sweet potato, potato, and kidney bean soup

How to make Red-Orange Lentil, Sweet Potato, and Kidney Bean Soup

2 table spoons of vegetable oil
1 medium size onion
1 cups of orange split lentil
1 medium size sweet potato
1/2 of a small potato
1 can of red kidney beans (soaked is cold water to lower sodium content)
Salt and pepper
1/2 cup spinach leaves
6-7 cups of low sodium chicken broth
2 egg whites mixed with 1/2 cup of milk

Add butter and onions in a pan and golden the onions then add salt, spices, sweet potatoes, potatoes, lentils, beans, spinach and chicken broth. Place the lid on the pot and on medium heat cook the soup for about 15-20 minutes or until the veggies are soft.

Let it cool a little (for about 5 minutes) then stir in the egg white slowly while mixing the soup.

Puree your soup in a food processor till it is smooth.
